Currently, I do not see a way to change the default 'Search By' option. Changing the search type and saving as a custom view does not keep the change you made.
Searching by a product code may not always be the default way a user wants to search. Maybe mfg part number is more common and easier for them. The user should be allowed to set their default search criteria, including the Search By option.
